VEGÁN BLUEBERRY CHEESECÁKE
INGREDIENTS
FOR THE CRUST
  • 1/2 Cup Dátes, Soáked (in wárm wáter át leást 10 minutes)
  • 1/2 Cup Álmonds
  • Dásh Sált
FOR THE FILLING
  • 2 Cups Cáshews, Soáked (át leást 10 minutes in wárm wáter)
  • 1/2 Cup + 2 Tbsp Máple Syrup
  • 1/3 Cup Coconut Creám*
  • 1 Tsp Vánillá
  • Juice of 1 Lemon
  • 1 Cup Fresh Blueberries
INSTRUCTIONS
  1. Begin soáking dátes ánd cáshews in sepáráte contáiners with wárm wáter.
  2. Ádd álmonds, dátes ánd sált to á food processor, ánd process for ábout 3-5 minutes, or until mixture sticks together in 1 lump. You máy háve to scrápe down the edges á few times.
  3. Ádd mixture to á 6x6 spring form pán** ánd squish ácross the bottom evenly. Pláce in freezer to set.
